Salmon Avocado Omelet

Cooking time: 10 minutes

Yields: 1 Serving


2 eggs

1 tsp coconut oil

1/2 clove garlic, finely minced

2 pieces sliced smoked salmon (about 2-3 oz)

1/4 avocado, diced

1 tsp fresh cilantro, chopped 

Sea Salt, pepper and hot sauce/salsa to taste


Beat eggs in a small bowl.

Heat oil in a frying pan.

Add onion and sauté for 5 minutes.

Add eggs, turn heat to low and cook for 3-5 minutes until eggs are mostly cooked.

Distribute salmon and avocado evenly across the eggs. 

Use a spatula to fold the omelet in half and cook 30 seconds on each side
