Maple Bourbon Pecan Pie

Pecan pie is my all-time favorite holiday dessert. Since gluten and dairy are no longer part of my life and I wouldn't dream of using corn syrup like I did years ago, I created a cleaned-up version of this holiday favorite. One Pan Chicken Puttanesca

This is a simple but satisfying dish that only takes about half an hour to make and is sure to please the whole family.

The classic Italian flavors are delicious at any time of year, and I serve this with a simple arugula salad with a garlic vinaigrette in spring/summer or roasted Brussels sprouts in winter.

Broccoli, Cabbage and Turkey Skillet

This is an easy, quick and inexpensive meal that’s perfect for batch cooking. Cabbage packs a nutritional punch as it’s loaded with fiber, vitamins c & k, and cancer fighting antioxidants. I prefer to use dark meat turkey for this dish for extra flavor, but white turkey meat, ground chicken, or ground grass-fed beef work fine too.

Coconut Curry Shrimp & Broccoli

Heat the coconut oil over medium heat. Add the onion and cook until the onion has softened. Add the garlic, ginger, and curry powder and cook for another minute. Stir in the coconut milk. Bring the sauce to simmer then add the broccoli until it is fork tender. Add in the shrimp until the shrimp are opaque and cooked through. Enjoy!

Ginger & Turmeric Butternut Squash Stew

Melt the coconut oil, then add the garlic, ginger, and onion. Sauté, stirring often, until softened and fragrant. Add in the squash, spinach and turmeric and season with salt and pepper. Cook for one minute, stirring often. Pour in the coconut milk, broth, and lentils and stir. Cover and simmer for 20 minutes, until lentils and squash are cooked through. Carefully purée until smooth. Enjoy!

Citrus Coconut Cod

I used cod for this dish but any firm white fish will work and even salmon would be delicious with this preparation. If you like, you can double all the ingredients except for the avocado oil and fish and serve this like a curry over rice, or just eat like a stew with a big soup spoon.
